Pork chilli Verde is a classic Mexican dish that features tender pork pieces simmered in a Savoury green sauce made mainly from a combination of green chillis. Here we used Jalapenos and two bullet chillis It often includes onion and garlic, adding to its fresh, tangy, and mildly spicy taste. The pork is usually browned before being stewed in the green sauce until it becomes tender and infused with the sauce’s vibrant Flavours
Ingredients
+ Jalapeno 200g
+ 2 Bullet Chilli (hot)
+ Olive oil 2 tbsp
+ Pork Loin 494g (cubed)
+ Chilli Powder 2tbsp
+ Cumin 1tsp
+ Salt Dash
+ Black pepper Dash
+ White onion 150g
+ Garlic 4 cloves
+ Oregano 1 tsp
+ Chicken broth 250ml
+ Coriander leaf 125g
+ Lime juice
Preparation
> Season the pork cubes with salt and pepper.
> Brown the pork in batches until all sides are nicely seared. Remove the pork from the pot and set aside.
> In the same pot, add the chopped onion and cook until translucent, about 5 minutes
> Add the minced garlic and cook for another minute until fragrant.
> Stir in the green chilies, and jalapeños. Cook for about 5-7 minutes until the vegetables start to soften.
> Return the browned pork to the pot and add, chicken broth, ground cumin, Chilli powder (optional) dried oregano, half of the coriander, salt and pepper
> Let the pork simmer on a low heat for up to 2 hours
> Serve with lime juice and add more coriander to dress if desired.
