Lamb liver pâté is a rich and flavourful spread loaded with nutrients. Benefits of eating lamb liver, it is considered the powerhouse of essential nutrients but to be eaten in moderation due to high levels of vitamin A. It may contribute to a balanced and healthy diet.
Ingredients
+ Butter 125g
+ Onion 50g
+ Garlic 2 cloves
+ Salt ¼ tsp
+ Pepper ¼ tsp
+ Fresh thyme (dressing) optional
+ Sage 1tsp
+ Lamb liver 350g
+ Bacon 50g
+ Double cream 30ml
Preparation
> Prepare the liver, rinse under cold water and pat dry with paper towels
> Cut the liver into chunks removing any veins and connective tissue
> In a frying pan gently fry the onions, sage and garlic (1 clove) in butter 50g for around 5 minutes.
> Increase the heat of the frying pan cook the liver and bacon for around 5-7 minutes. Add salt and pepper. Avoid overcooking the liver as will become tough.
> Remove from heat and allow to cool down
> Use food processor to blitz the ingredients, adding the cream to the mixture
> Once you have the desired texture place in ramakin and allow to cool.
> In a saucepan melt the remaining butter and add the garlic.
> Pour over the pâté and allow to cool in the fridge for the glaze to set, add sprigs of thyme if desired.
