Moussaka is a traditional dish from the Balkans and the Middle East, with its most famous version originating from Greece. The dish consists of layers of ingredients, this is a keto version so much lower in carb, traditionally potatoes and aubergines are used for the layers, here we use layers of egg and cheese omelette style.
Ingredients
+ Lamb mince 2lbs
+ Garlic clove 3
+ Butter 2tbsp
+ Onion 50g
+ Oregano 1tsp
+ Salt ½ tsp
+ Pepper ½ tsp
+ Eggs 4
+ Tomato purée 30g
+ Tomato passata 150ml
+ Cheddar cheese 250grams
Preperation
> Preheat oven to 190c and butter the baking dish.
> Brown the onion and garlic and then add the lamb mince for around 8 minutes until cooked through. Stir in the tomato puree and season with salt pepper and oregano
> Set aside and allow to cool, drain off liquid.
> Whisk the eggs and grate the cheese.
> Place one layer of the lamb mince mix at the bottom of the baking dish
> Mix 150grams of the cheese with the eggs
> Pour one layer of the egg cheese mix and grill for 2 minutes on high heat, creating and omelette layer
> Place around 50ml of the tomato passata on top of the omelette
> Repeat steps 5, 7 and 8 on the next layer
> On the top layer add tomato passata first then egg and the remaining cheese.
> Place in the oven and bake for around 20 minutes at 190c
> Finish by grilling the Moussaka to brown the cheese and add fresh oregano (optional)
