There are lots of different variations of this around, a parfait is a smooth pate, sometimes browned before cooking, sometimes eaten on the raw side. A layer of Organic Ghee on top makes a top nutritious Keto food, high in Fat, low in Carbs and moderate protein. Normally this dish contains alcohol & sugar we are omitting them from this dish. You can have this with your favourite Keto bread or just eaten on its own.
Ingredients
+ Shallot 20g
+ Garlic bulb 2
+ Avocado oil 2tbsp (or Olive oil)
+ Thyme dried 2tsp
+ Cream 2tbsp
+ Butter 2tbsp
+ Chicken Livers 351g
+ Ghee 50g
+ Egg 1
+ 3 springs fresh thyme
+ Salt ½ tsp
+ Pepper ½ tsp
Preparation
> Preheat oven to 190c
> Add rinsed chicken livers, avocado oil garlic, shallot, cream, butter, egg, salt & pepper to a food processor and mix until smooth consistency
> Use sieve to filter out any debris, filter through again, repeat
> Pour mixture into 6 ramekins or one large ceramic bowl
> Place in oven and cook for only 15 minutes at 190c
> Leave to cool for 30 minutes
> Melt Ghee in a saucepan gently
> Pour ghee over the mixture and allow to cool in the fridge for up to 3 hours
> Once the Ghee has set dress with fresh thyme
> Serve with your favourite Keto bread or vegetables
