Feta Bouyiourdi is a traditional Greek appetiser or light meal. Traditionally bell peppers are added, I have omitted the bell peppers here lowering the carb content here, but feel free to add some bell peppers to make more authentic. It can be eaten on its own or you can eat with some low carb Keto bread /Rolls.
Ingredients
+ Feta Cheese 200g
+ Garlic 1 clove 3g
+ Oregano 1tsp
+ Olive oil 4tbsp
+ Tomato 50g
+ Salt ¼ tsp
+ Pepper ¼ tsp
+ Parsley to dress (optional )
Preparation
> Preheat your oven to 180°C (350°F)
> Slice the tomatoes and scoop out seeds
> Chope the garlic and sauté the tomato seeds in olive oil (use light oil not Extra virgin) for 2- 3 minutes
> Cut the feta into thick slices or crumple, depending on preference
> In a ramakin place garlic and tomato base mix
> Place the Feta on top of the mix and season with oregano, salt & pepper, add tomato on the top
> Place dish in preheated oven and bake for 20-25 minutes until feta cheese is soft and slightly golden , drizzle with some extra virgin olive oil and serve.
